Strawberry Tarts

I have wanted to make these strawberry tarts ever since I received a copy of Barefoot in Paris. I made these for our Mother's Day brunch and they lived up to all my expectations. I decided to make the crust from a tried and true recipe, I did not want any failures for Mother's Day. I am happy with my decision as the crusts came out perfect. One whole recipe of tart dough provided five mini-tarts. The pastry cream was delicious. The recipe calls for Cognac but I substituted for Brandy since that is what I had on hand. Strawberries are in season and they were delicious. I think any berry would work for this recipe. On Ina's TV show she gave raspberry jam as an alternate to apricot and that is what I used. This is my first time making mini-tarts and they were a smashing success. The recipe can be found in Barefoot in Paris page 215 or from the Food Network.

  3. Oh my goodness, this looks glorious! I'm really not sure a dessert could be any better than this. It might make me forget all about chocolate:)
