Palmiers or elephant ears are puff pastry, rolled out on sugar, folded, cut and baked until the sugar caramelizes. They were simple to make and an ideal dessert for the busy holiday season. Next time I will try them with a little cinnamon on the inside. These were a popular treat in my house and are quickly disappearing.
