Classic Jammers

Dorie's Cookies

Cookies with jam are very popular in my house. Unlike my fellow bakers I did not have gobs of jam to use in my cookies. I stuck with my staple of strawberry jam. 

I think these are fancy cookies and for special occasion due to the multi-step process in making them. As I was cutting my dough out to put into the tins I noticed the dough getting soft which made it difficult to get off the parchment paper in one piece. I filled one 12 cup muffin tin and put the rest of the dough in the refrigerator to chill up again. This lengthened the process of cooking as I could do only one pan at a time. I must have rolled my dough too thin as the bake times were way off for me. I burned my first batch at 20 minutes so I ended up decreasing my cook time to 15 minutes. Despite my goof-ups they were delicious. Rave reviews from the family.

I liked Mardi Michels idea of the galette version of this cookie we made from Baking Chez Moi. This was also a hit in my house and was much easier to make.

  2. Your cookies look delicious. I made the cookie dough and the streusel a few days ahead of time, so all I had to do was assemble. That makes the process a little more friendly.
