Curried Chicken, Peppers, and Peas en Papillote

The last en papillote we made for French Fridays was baby bok choy, sugar snaps, and garlic which I loved so I was looking forward to trying the same technique with chicken.  The prep for curried chicken, peppers and peas (page 221) could not have been easier.  Place cut up chicken breasts, sliced red onion, diced red bell pepper and peas into a bowl add olive oil, curry powder, salt and pepper. Divide into foil packages and cook.

Cooking in these foil packages makes for such easy cooking and clean up.
Everything came out perfectly cooked.
I served this along with wild rice which was not a hit with my son.  My husband and I liked this dish and would definitely make again.

  1. Looks so delicious, and so easy. I really want to try this method more often. I remember making salmon this way about two years ago and it was fantastic.

  5. OMGorgeous! my DH would love that wild rice side! Wild rice (the imported variety) is very expensive and I have yet to be able to source our local ones. DH eats his usual organic 10 grains rice. I love this hot with my pasta and even cold from the fridge as a sandwich filling! Yumms!

  9. I made 1/2 and had enough for two meals - for me. Hubs is NOT a curry lover. Have to try again with different seasonings for him.

  12. This is a wonderful technique for cooking a healthy family-style dinner with moist chicken and fabulous vegetables, isn´t it?! Your packages certainly look delicious and so nice to read that you all enjoyed this recipe so much!
